Ideas to use home grown herbs

Spring has sprung and my herbs are a booming.
Unfortunately they are starting to crowd each other a bit and it's time to harvest a bit of each.
I'm looking for ideas for:
Sage
Greek oregano
German & English thyme
Orange Mint (holy crap it grows quickly!)
Also post any you are growing!!

Obviously use what you can fresh. But I’ll cut them back and dry to use at camp and whatnot.
I’m hoping you have that mint in a separate container. Stuff takes over quickly.

I grew a ton of basil the past two years. I made pesto and froze it into ice cube trays. Whenever I want a quick pasta meal, I just throw a cube or two into a pan with some shrimp and saute. Then add the pasta. Quick and easy.

Sage, oregano, and thyme are great in a roasted chicken. Just tie them up and put in the cavity.
You can make herb infused butter for steaks or fish.
Mint is obviously the star of a mojito if that's your thing. Also, get a pitcher of water and put fresh mint, a lemon sliced up, and maybe some cucumber and/or fresh ginger. Keep it cold in the fridge. Very refreshing!
Mint is also great in salads. Find a recipe for a watermelon salad with feta and mint. Great with BBQ!

I boil and debone chicken and keep for other dishes.
In the boiling process, I put thyme, oregano, basil — whatever I have — and I then freeze the broth. It makes food delicious.
