It's the greens more than anything. I don't think they've played a modern US Open on Bermuda Greens ever (I think Pinehurst switched recently to a Bermuda strain, and its come a long way), but they much prefer bent grass. I think Chambers was fescue and the Poa infestation was a disaster. Pebble and Torrey are both poa, which I think is technically a bent grass variety, I beleive.
If the next edition at Pinehurst is a success on Bermuda, it may open things up a bit, but I still don't see any course in South Louisiana having the potential or cache to be considered worthy of a US Open.
If the PGA is moved to May, Bayou Oaks could do it, but it needs some more investment.

I think The Alotian Club would be a better host spot. I'd love to see Country Club of Birmingham host a PGA. It's nicer than Shoal Creek and they're in the same city.

I'm almost certain Pinehurst was bent grass for the last open, and they regressed them almost immediately after the ladies left. They also let Cranshaw and Coore flatten out some of the "crown" effect so they could play at the faster speeds people expect now after the last open.
Yes, they get another open in the early '20's. I think it will be the first on Bermuda greens in the modern era.
Bayou Oaks would definitely probably need to double down to get up to standard to host the PGA Championship.... new practice facility, and a lot more "shaping" and additional bunkering in the fairways. I think the site has the potential... tons of space for grandstands and corporate stuff, and the location is ideal. NOLA In May could be ideal weather. The greens complexes are good enough and they could grow up the rough and tighten down the fairways to trick up the difficulty.

Umm no. Most greens out there are dead flat. To host a major, Bayou Oaks would have to redesign every green and reshape fairways, add bunkers, etc.
stuff they probably should have thought about when building a brand new course!

I've been waiting for someone to chime in about this.
There's one or two, that I remember, that would be considered appropriate for a Tour course. The rest are like you said, just too flat/easy for a Tour event.

Dude. The Tight lies post -25 under there. Even with faster greens and rough it's easy for pros
