Pick something with high vitality and high strength. Your instinct will be to smash attacks, so dealing high damage will be a nice crutch while you're learning the game.

Indeed I do. Demon's Souls was a cult hit in Japan, and its popularity was very much after it got released. Sony mistakenly passed on localizing it (which they later stated was a huge mistake + they played an old build that had a lot of problems). The developer hadn't really made any big games before, so they had no reason to think it would do very well. Atlus localized it, and Namco Bandai reached out to From Software for more Souls games after seeing its success in Japan + West.
So, Sony has been forced to wait until Namco's contract was up before getting the collaboration back together again.

I was wondering if it would get any bites
I've watched so many people play demon's souls, that I really don't know if I would enjoy it, but at the end of the day I'm sure I would lap it up just like the other two.

If you enjoy Dark, you will very much enjoy Demon's Souls. The biggest problem with Dark Souls is that it feels like the game really ends after O&S, and the whole second half is nothing but a fetch quest that doesn't have the same connectivity as the first half.
