Wknd cooking suggestions

Out of ideas, tired of grilling and smoking different meats. Just did jambalaya, chicken fricasse etc. flipped thru john folses books just now and nothing jumped out.
Would prefer to not grill or smoke meat. Not opposed to fish on grill with a sauce or oysters or something in black pot???
I love to cook and don't mind time consuming dishes, would do a crawfish bisque if I knew I could get the heads here in mobile, but that is doubtful. Any suggestions, I'm stumped

I have a 4 gallon even fryer works and am fried out,

Shrimp creole or crawfish stew wouldn't be out of the question, something like that is what I'm looking for

Chicken Galantine
Stuff it with whatever you fancy.
It takes a few times to get the hang of it, and a short sharp knife is important. But I think it's a lot of fun, and it makes it really easy to eat and carve. You can also easily have white and dark meat together.
I put mushrooms in a food processor with a little olive oil and roughly processed it. Then I sauteed some garlic and onion, wilted some spinich and put it in a bowl with the mushroom and folded it with ricotta cheese.
Stuffed the deboned chicken, then trussed it all up and roasted it in the oven. The best part is you can make this ahead of time if you want, or do two birds with different stuffings for variety. There are literally endless options.
I would also think about brining (dry, regular or injection brine) before hand. It makes an awesome dish and it looks fancy.
Or maybe roast a rack of lamb. Nicely frenched.

If you haven't had a boudin stuffed porkchop from best stop, get one. It will change your life.
Recipe:
1) Brown chops in Dutch oven
2) remove chops from pot, add layer of onion, bell pepper and garlic, place chops on top of veggies
3) cover and put pot directly into the oven at 350 for 30 min, open and stir, reduce heat to 220 for another 30 (do not sautéed veggies on stove top)
4) Remove chops from pot and thicken gravy with corn starch on stove
5) Cook da rice baw

i think i have decided against my wifes wishes, dove and andouie gumbo (maybe drop a lb of shrimp in there too late) with tater salad, havent cooked in forever. thnx for suggestions, will refer back to them in the future
