Just watched this video... and thought it was an awesome video by an awesome old cook... but I really don't like liver... at all (and I really like and respect the old school idea of trying not to waste anything... but I really don't like liver). But watching this video makes me want to at least try some sometime.

I heartily agree with him that dirty rice shouldn't be make with ground beef but watching him do his version tired me out. He's using way too many ingredients and making an all-day project out of what ought to be a simple one-pan dish. Saute some chicken livers, chop them, saute some trinity, add the chopped livers back in, throw in some cooked rice and spices, and you're done.

I hate liver on its own, but I love me some dirty rice. And if you want proper dirty rice (and boudin as well)you simply must use liver!

How else would you eat it?

I'm picky but I've always eaten my grandma's since before I knew better. If I was presented with it for the first time now and told it was made with liver, I'd probably turn my nose up at it. But it's one of my favorite dishes

I make mine using ground beef, jimmy dean pork sausage, and trinity bc I don't like liver and can't bring myself to add it on my own. However, I know when I eat good boudin and other dirty rice its in there and I don't mind haha. I guess it's just a mental thing. Some the best I've had was at toups meatery.. They had a video of him making it and he uses a dark beer

Dirty rice was a contributing factor to me getting up to 200# when I lived in St. Martin Parish for 8+ years. I love that stuff.

Stuff it or the dirty rice in a bellpepper and bake for 40 min at 375. Good stuff.

It's called rice dressing on both sides of my family(Evangeline/St. Landry) and must include chicken liver and hearts. I hate that can't find either unfrozen any more.

Bought some chicken livers, bulk sausage, and veggies today. Couldn't find pork liver. Going to make some tomorrow.
