put a little cayenne in the flour

So do I at times. Gives a nice spicy jolt that I like, but not for everyone, so I don't always do that.

Prob not, but I do it outside on the fish fryer, so it isn't too bad on the mess. I guess I like to have it about 1 time a year cause I grew up on it that way. It is different than Churchs or Popeyes.

I salt/pepper/paprika my flour. Soak in buttermilk, but just long enough for the oil to heat up. Electric skillet at 325 for chicken, around 350-375 for Pork Chops or veggies. Let it drip from the buttermilk, when it quits dripping, toss it in the flour. Move it around some to get it on the sides. Flip it over and repeat, then fry it. About 10 minutes give or take.

We fried pork chops last week, and some squash and tomatoes. I told my wife the red tomatoes wouldn't fry as well as green ones, but she wanted to try anyways. They tasted fine, but just fell apart. The squash was amazing. I need some fresh okra now. I used corn meal instead of flour since I was doing veggies.

Deep fry in cast iron. Seasoned chicken in seasoned flour. Drop it at 375*. Maintain 340* to 355* Sometimes brine for about an hour before.

I thought we were talking about yard bird in the skillet.

IMO there is no better way to eat mashed taters and green peas. Mixed together is the best way to go, regardless of what Miz GG might say.

Is it worth doing?

If you do it properly, I think it's worth. Growing up, we had fried chicken pretty often and while I'm not a big fan of chicken, that meal was one of my favorites. Home fried chicken is hard to beat. Like I said, I like to season the chicken and use seasoned flour only, so that's easy and there's no gummy uncooked batter like you get sometimes at fast food joints, particularly Popeye's.

I figured it just wasn't worth doing with all the fried chicken available from restaurants.

I guess that depends on how good the fried chicken is around your parts. Popeye's is good, but it's not great and certainly not the best out there. I haven't had Church's in years, but it was okay. Same with KFC. I never found it to be crisp enough. If the skin isn't good, forget it.

There's a place in Boyce called Uncle Albert's just off I-49 a bit that someone mentioned here a long while back. Finally got some of that chicken and it was the best fried chicken I've ever had from a restaurant. Dirty dingy looking place that's apparently been around forever, but that chicken is some good. If you're ever traveling that way, stop off. I'm not sure I'd eat inside the place, but I'd eat it in the car.

Deep fry. It's faster and I can cook more chicken at one time.
