2 cups AP flour 3/4 cup buttermilk 1 egg beaten 1 TBS sugar 1 tsp vanilla extract 1 tsp salt 1 egg white beaten to soft peaks Sift AP, sugar and salt into a bowl Add buttermilk and vanilla to the beaten egg combine. Add to dry ingredients and stir leaving some lumps. Let rest while beating the egg white. Fold egg white into batter. Cook on a griddle. Serve with melted butter and your favorite syrup.
