Sometimes, I eat the casing and sometimes, I don't. If it's crispy, I always eat it. Steamed can sometimes be a little chewy. I've had plenty of very good tasting steamed boudin with casing that's a bit on the chewy side. It's the boudin inside that matters to me.

I've been eating crawfish from Tony's in BR for well over 30 years and I have never once had bad crawfish, unseasoned crawfish, hard to peel crawfish or mushy crawfish. They boil in plain water then soak in hot seasoned water. So either you cultured palate is scalded by the lava like interior of a hot pocket or your pants are on fire.

And to the rest I told you the boudin casing was the controversy. And full disclosure I do both. Just depends on where it rips when I bit into it. And if you haven't removed it from the casing and built some scrambled eggs around it you ain't living.
