What to do with wild duck breast (other than fry or wraps)

Tired do frying duck and making duck wraps. Got some thawed and need to cook.

What are some good options ?

Skin on med-rare salt and pepper over a wood fire is damn solid.

Duck gumbo

Make some sausage 50% duck and 50% pork and also 50/50 with beef

Jalapeno duck poppers wrapped in bacon

it blows my mind that people spend all that money on shells, hunting gear, training a dog, and getting their arse up a 4am to shoot something that they don't like eating.

Ok Bart. Here's a recipe that will keep your freezer empty.

Duck Marsala

Clarified butter(butter boiled to get the water out)You have to seine the water out once it comes to a boil. And don't over boil it.
flour
sliced duck breast
green onion
mushrooms
sweet marsala win
garlic
beef stock
chicken stock

Heat butter in sauce pan. Flour the duck breast(all purpose) and cook flipping ducks once. Add onions, mushrooms and garlic. Let cook medium heat will work. Add marsala wine, ch. stock and beef stock. Cook down and pour it over rice or fettuccini. You're welcome.

crispy duck eggrolls stuffed with crisped duck breast, mushrooms, and spicy chilis.

They go great with duck sauce

Brown with onion in cast iron pot until medium. Cut into small cubes and make a duck gumbo / thread !

just cook it like a steak.
Good sear on both sides, salt and pepper, medium rare.
