What to do with Tomatoes

My plants are really starting to produce. I have 3 good sized ones and a couple smaller ones that are sitting in the kitchen. I've never canned or made sauce from scratch before, but leaning towards one or the other. Any other suggestions? Maybe Salsa or Pico.

salsa if im going to eat it now. red sauce if i want to freeze it.

maybe a big jambalaya

Salsa

Honestly one of my favorite snacks is sliced fresh tomatoes with a bit of salt. Delicious

I'm definitely going to pick a few while still green to fry. More thinking about what to do with ripe ones.

all of this... look at my plants everyday and salivate thinking of fresh tomato slices coming soon

That and some fresh cracked pepper is great. But I don't see myself eating a whole one every other day. And we have the cherry ones for salads. These are the better boys that are producing a good bit at the moment. I know it will slow down soon but for now the plant is loaded.

I do know we're having BLT's for supper tonight though.

I made a ton of this last year. Great on grilled chicken, too.

Just like frying squash/zucchini/okra really. They need to be pretty firm to hold up to frying. I use corn meal for the batter. And buttermilk. Hot oil and fry until the batter is done.

This^^^. Slice @ 1/4" thick, buttermilk, seasoned cornmeal, fry until golden and floating at 350.

Thanks, I'll give that a try too. I had my first experience making jam a few weeks ago with mulberries, and it turned out awesome. Lived in this house for 9 years and never realized we had a mulberry tree. I guess my dogs and the squirrels were eating them all. We picked a few gallons of them off of the ground over about a 3 week period.

Dont ruin good home grown maters like that. Just keep it simple.

Slice- salt and pepper. Eat it like that or put it on a BLT.

Well, I got the idea from the frozen bags that were in my grandpa's deep freeze, that is now in my basement. He always had a huge garden. I'm still eating blackeyed peas he grew. Tons of them. The tomato sauce is pretty good too, so I was thinking if I end up with enough at one time to make some, I might give it a shot. Mainly looking for recipe ideas for something like that.

My neighbor has a garden like that. A little bit of everything. I love it when he goes out of town - I become a garden ninja!

Ha, mine is actually looking pretty good. I have about a half dozen squash almost ready to pick. The corn is starting to silk and hopefully I'll have some growing soon. Peas are looking good. Okra starting to grow too. It was our first attempt at it. I may have mentioned it in the gardening thread here, but our dogs passed away or had to be put to sleep last fall, so we decided to plant a garden this spring. I quit trying to grow several years ago because the dog ate all my tomatoes before I could. We just took a shotgun approach and planted about 10 different things. Whatever grows well we'll do again. Whatever doesn't I'll replace with something else next year.

A simple tomato and cheese sandwich (with a litte mayo) is a great pleasure in life.
