What are the most underrated foods/dishes

A few that come to mind

3 bean salad
Pimento cheese
Tofu (downvote away, but it's a nice change of pace sometimes)

Additions based on other comments I agree with

Deviled eggs
Peanut butter
A good turkey/ham and cheese sandwich (w/ or w/o potato chips on it)

Easy things…

Peanut butter & Nutella sandwiches
Deviled eggs
Pimento cheese & Ham sandwiches
Blondies (cookie & brownie combo)
Cheeseburger Hamburger Helper with corn on top
Spaghetti with chili on top

Also:

Graham Cracker bars (not sure of the correct name). The one where you smash 2 packs of graham crackers into a powder in a 9”x13” and add a stick of melted butter and flatten it out, then put a can of sweetened condensed milk and a pack of chocolate chips on top and bake at 350 for 15 minutes

Coconut Cake. The simple Louisiana version with a layer of yellow cake on a 9”x13”, then you poke a million holes with a fork when its done and spread a can of Ancel coconut and juice on the top

Simple, taco seasoned Ground meat
Rice with butter, salt & pepper
Lima beans cooked to practically mush
Shepherd's Pie
Very Tiny Early Green peas (silver can only!)

A new addition in my book- I just tried salted cottage cheese for the first time last week, and it's such a great snack.

Black Beans and Rice on the side of any good protein, from a great steak to a fried pork chop or a grilled chicken leg quarter.

Real ham sliced off a bone-in ham, then either made into a sandwich, or served with grits and eggs, or made into a quesadilla or a breakfast burrito.

A Reuben sandwich.
