We are just looking for the best local food that can only be found in New Orleans
Not sure that really exists and Cajun food is typically better in other Southern parts of the state.
You should probably add poboys to your list and hit up Johnny's in the Quarter for lunch. The best to be found are in the New Orleans area, hands down, in my experience. Stanley will have some also, but the more traditional are found at Johnny's if you're staying in the Quarter.
Have a good trip and report back.

Chickens Sue's has the best roast beef poboys IMO.
Also try that restaurant in the Hyatt. their turkey necks are pretty good.
