I wasn't getting the crust that I've been wanting in the cast iron, so I got a heavy meat press. I'm intrigued.

I have been having good results with putting more grapeseed oil in the skillet and getting it to a higher temp before i put the steaks in to sear. It is almost pan frying like fried chicken. Puts a good crust but it gets too hot to brown the garlic and herbs. Those just burn up. I have lately been searing my steaks with just salt and pepper in one skillet and then gently browning garlic and thyme in butter in another skillet at lower heat. Once the steaks come out to the cutting board, they get the butter poured on them with the garlic. Eaaaassssyyyyyy.

I bet this technique would put a rockin finish on a traditionally cooked steak.
