Went with balsamic, evoo, Dijon and 1 packet of Splenda and salt and pepper.

Not sure about that question.
I wanted a slightly sweet dressing because that salad should've had apples or strawberries or dried cranberries in it. I thought caramelizing the grape tomatoes would compensate, but not enough. The dressing recipe I sort of followed called for honey, so I decided to use a packet of Splenda in its place.

Yeah, sorry. The word "not" should not have been in there. So, you want an oil based "sweeter" type dressing?

1/2 cup olive oil
1/3 cup balsamic vinegar

1 teaspoon of minced garlic
1 pinch kosher salt
1/2 jar Tabasco jalapeño pepper jelly
Whisk it up.
The pepper jelly gives it the sweetness. Hope this helps.
