I went to the new Kroger's in Bossier on Airline Drive and got some fried chicken from their deli. It was crap. I gave it to the dogs. They said it was excellent.

I had a chopped beef sammich from a round roast I cooked yesterday. It was OK. I should have cooked it 6 hours instead of 4.

The wife had her fake fish/crab salad with spinach, cucumbers along with sauteed red onion and mushrooms and rainbow pasta with my oil and vinegar garlic dressing.

Friend gave some fresh ground deer/brisket/green onion, so making burgers with that mixture. Onion buns.

BBQ Sandwich from leftover ribs from lunch.

Having a Little Debby Peanut butter bar and an oatmeal cookie at the moment with a diet Dr. Pepper.

Does anyone have a good recipe for braised beef short ribs? Bought some at the market today and plan to cook them tomorrow.

The Pioneer Woman recipe.

Make them a day ahead and refrigerate in the dutch oven so you can just pull the layer of fat off the next day. It isn't really skimmable IMO. You can, but it is better if you make it a 2 day process.

Braising is the same no matter what though. Lightly flour the ribs. Sear them. Remove. Add your chopped veg (onion, celery, carrot, garlic, etc.). Brown.. scrapinng the brown bits if you can. Deglaze with wine.. or water.. or beef broth.. whatever you want. Use a good bit of it. Return ribs to pot. Either simmer on low with lid on or put into oven with lid on. Cook a couple hours. Either refrigerate at this point or skim the fat the best you can. Remove ribs. Reduce liquid until it thickens. Return ribs. Serve over grits or rice.

I do this same thing with chicken thighs. Just with chicken-friendly things like capers, white wine, etc.

I second the Pioneer Woman recipe. Use red wine like she recommends, it's ridiculously good.

Tonight is pizza night. Thankfully tomorrow life should slow down. I've eaten too much crap lately.
