Off the grill...ribs, yard bird, brats, yellow and zucchini squash, eggplant, corn and pineapple. Baked beans in the oven. Made a roasted tomatillo salsa and will do some guacamole to go with it.

Roasting a chicken.
Doing like Bon Appetit says and roasting directly on oven rack with a pan of vegetables below to catch the drippings.

I usually elevate my chicken in the pan. I hate it sitting in the juices, makes it all soggy.

I put a roasted chicken recipe in the RT a few months ago. It's legit if you want to try it sometime.

I haven't. Bought a magazine with it in the airport the other day, and the recipe looked so good that I went out and bought everything to cook it today.

They said everyone who roasts chicken any other way besides directly on the oven rack with a pan under (with veg/potatoes) to catch drippings is doing it wrong. So I listened

I brined for 24 hours and dried for 6 hours as well. I won't even have to season the chicken.

Totino's Three Meat pizza pie was requested by Junior.
I'm grilling bacon and cheese stuffed burgers for the wife and MIL. The sides will be baked beans, snap bean medley that Junior will take to lunch tomorrow along with a couple of wieners that are simmering in a pot of chili now. I found a dozen and a half beers leftover from the beach trip which will hold me over until my chili dog breakfast.

Grabbed wings, fried okra, turnip greens, and roasted corn salad from Six Feet Under in ATL around 4. Snuck out with some leftover wings and okra that have beat the hell out of any gas station snack.

At our house, Chicken thighs are on the grill and doing good. Corn is roasting and looks good. May take photos because I bet no one here has ever seen a chicken thigh on a grill.

Also I see a miller lite in my future.
