I braised a pork belly from about noon to 3:00. Now it's chilling in the refrigerator.

It will eventually become a part of a sweet potato and portobello hash tonight. I plan on sticking a poached egg on top as well.

I, too, am in the process of hitting this one out of the park

The menu when Lucy wakes up in 2 hours:

1. One serving of leftover gumbo.
2. One serving of leftover pasta salad.
3. New pasta/ground meat with Monjuni sauce.
4. Frozen Taquitos ..Jose Ole shredded steak.
5. French bread and butter

Lucy will probably go for the pasta and french bread. I'll kill off the last of the gumbo and salad. Tomorrow is a big pot of catfish courtbullion.

The wife has been shopping in NOLA all day today. She's bringing a lasagna home from Cucina Italiana.
