Probably fontina, provolone, parmagiano and gorgonzola. Maybe mozzarella in lieu of either the fontina or the provolone.

trying to figure out how the frick to cook tofu to add to fried rice

I've got the fried rice down, never tried it with tofu before

I think I'm going to pre-fry it crispy and then toss it in when the fried rice is almost done.

I actually chose Fontina, Goat Cheese, Parmesan, and Romano. (It's actually 5 cheeses.. have some asiago too)
