The owner was on Tom Fitzmorris' show today but I only caught 5 minutes. Owner said his recipe for andouille and smoked sausage is exactly the same except for the casing size and different grinds. He said they tasted different only because of the grind. The ingredients were Boston butt, salt, pepper, cayenne and fresh ground garlic (not powder). No curing agents at all. They are held overnight before smoking to dry out some.

Andouille makers, how does that sound to you?

Anybody hear anything else of interest?

It's good andouille, but I like Jacob's and Don's from Reserve better.

To tell you the truth, I like all the Laplace area andouilles.

I like Wayne Jacobs best, as I find it has a heavier smoke than the other Laplace products. It's a bit coarser ground, too.

Wayne Jacobs is my favorite. Jacobs is OK as is baileys.

Don't know about making it, but I bought some last month and enjoyed just thin-slicing it and eating it plain. It does have a heavy smoke flavor, which I prefer.

It's definitely wayne jacobs for me. It has the perfect combination of spice, smoke and fat content.

I like how coarsely ground it is and find that this contributes to it staying together in gumbo and red beans.

A thin slice with horseradish mustard is a great snack.

I was really hoping somebody heard the rest of the conversation on the radio. Fitzmorris doesn't have podcasts set up yet so you can't catch a show you missed.

I'm kind of bummed I can catch his show anymore...

Esp his Tuesday show. He has some good guest and I enjoy what they have to say.

No love for Veron Supermarkets Andouille?

I get 10lbs Andouille and 3 boxes of sausage every time I go.

Not only is Wayne Jacob's andouille the best, you have to try the other products. They have great tasso, smoked and fresh sausage. I am biased, because I grew up on this stuff. I also like to get their fresh beans, which are better than any store bought brand.

I also like to give their gumbo packs along with some vacuum packed andouille as a gift to out of towners. Sorry for the advertisement, but I love that place.

If I am stuck using supermarket andouille, I will buy Veron's. It is the best of the versions available in grocery stores.

Hwy 90 does not go through Laplace. Do you mean Airline? (US 61)

Wayne Jacobs is on West 5th street, which is roughly parallel to US 61, but closer toward the river.
