I'm using pecan, Apple, and 1 piece of hickory because it was the last piece in the bag. Smells really good at about and hour and a half in.

I just woke up ... I'm smoking mine, but I'm spatching it so it won't take as long ... putting it on around 9.

Put 2 on the water smoker at midnight. Using pecan and hardwood lump. Beginning to smell good outside.

Same here. My bird is still sitting in a cranberry-ginger brine at the moment.

Put my 20lb bird on at 8. Did a dry brine ala Russ Parsons with citrus, sage, rosemary and thyme. I used NakedWhizz' suggestion of covering the breast with an ice bag for thirty minutes prior to putting on the grill.

Smoking wood is surgar cane.

Mines got about an hour to go, herb butter rubbed under the skin, Cajun butter injected and been glazing it with root beer.

Can't be bad
