Things to make with leftover crawfish

Crawfish Quesadillas, Crawfish Stew, Crawfish and Potato Soup all come to mind. But does anyone out there have anything that is an absolute necessity for themselves or their families whenever they have leftover crawfish available after a boil, other than just eating them by themselves?

I made a crawfish omlette that was excellent. But it was for breakfast.

I've also made a potato salad and put the tails in with it. Pretty good.

I was about to start this very same thread ! I have some tails leftover, but didn't save the heads for a bisque.

I'm looking to make something tasty tonight for Mr. Wave while he watches the big game.

Prob. and etoufee AND bisque (sans heads).

I make breadfast.

I take the potatoes and shred them up for hashbrowns. Then cut the corn from the cob and add that to some diced onion and green peppers and the peeled crawfish tails and saute them. Then put them inside a 2 or 3 egg omelette with your favorite cheese. Best part is, nothing needs any additional seasoning unless you wanted to add some drops of hot sauce at the end.
