i dont mind frozen fries, as long as they dont have that freezer burnt taste to them.

I doubt places like this let their fries sit in the freezer that long, if at all

They may not be expensive but they are a pain in the arse to cut, store, and cook correctly in bulk.

They are probably just cooking burgers and fries. If you expand your menu, you won't have nearly the prep time to deal with fresh cut fries. They are time consuming to cut, par fry, etc., especially if you have a somewhat diverse menu besides burgers and fries.

I've done them in bulk when I had my place and decided it was too much work to run a restaurant (cooking 95+% of foods from scratch) and keep up with fresh cut fries. There are some really good frozen french fry products out there that are almost as good. Some people prefer the better brand frozen french fries over fresh cut.

Personally, I prefer fresh cut fries but if I was a sandwich shop I would put more energy into the sandwiches first than the fries. Just my opinion.

The chicken livers are fantastic. If there weren't so many other things I wanted to try I'd order that every time I went.

They do some to have an issue with running out of menu items (both times I went they were out of something I ordered, and others in this thread have noted the same thing), but on some level that makes me feel like you're probably getting a product made with fresher ingredients. And I've never had a problem finding something else.
