TGIF... what's on the weekend menu?

Can't stop thinking about eggplant. :)

Thinking about homemade Chinese... sauteed eggplant, sauteed green beans, veggie fried rice and black pepper chicken.

if you like eggplant, make a lazagna using fried eggplant as the noodles.

Think I'm gonna cook a goose gumbo Sunday morning. Still have a few from last season in the freezer and it's always gumbo weather

I put a 5 lb brisket in the crock pot this morning before I left for work. Should be done by the time I get home. Making a mango chutney infused bbq sauce to go with it and then making tacos with brie & monterey jack cheeses and a tangy slaw.

Will also probably cook a pizza when I get home because I have salami and some leftover red wine reduction puree I think will make an excellent pizza sauce.

probably make some braised pork tacos with homemade tortillas later today.

tomorrow, thinking about making a batch of homemade boudin.

The form of lasagna in Greece which is made with sliced eggplant, a red meat sauce using lamb and some beef, topped with a bechamel sauce then baked til the top is browned a bit.

I had mu shu pork last night which is one of my favorite things. Had to get PF Changs because Dim Sum is closed for a few weeks per their answering machine. Not sure why.

Have pork chops and gravy in my crockpot now for tonight.

No idea what we will be doing tomorrow yet. (which is really unusual)

I made the Ultimate Sandwich. It's sitting underneath the weights right now.

I skipped the bacon. It's enough of a artery clogger without adding the bacon.
