Hard to find but PBS has a show called "Mind of a Chef". I usually have to look for it online but I've been having trouble finding full episodes. Dave Chang and Sean Brock are generally who the episodes center around.

Best food show to learn technics hands down is Americas Test Kitchen. It plays around 10ish on Saturday AM.

Diners, drive ins and dives and chopped are my favorites. They're on the food network and almost always playing.

The Food Network has sold it culinary soul to ridiculous contest and gimmicks. It started out with 'Chopped', not too bad, but them it went downhill to every silly contest the evils of ratings could come up with. From 'Cupcake Wars' to something really asinine with Alton Brown that has miniature kitchens and the like.

I look for America's Test Kitchen on PBS and had left the The Food Network to the trolls.

This is such a good show. Season 1 is on Netflix. I'd like to catch season 2 with Sean Brock. David Chang in Season 1 was great. It bumped Good Eats out of my top food show spot.

I can hardly stand to listen to Damaris for more than a few minutes.

I've enjoyed Knife Fights in Esquire since I found out about it recently.

She really is great.

As for the 'reality' shows I'll watch Triple Dipple D from time to time. I've never been into shows like Cutthroat Kitchen or Iron Chef...I watch Chopped sometimes but not that much. I prefer the cooking shows that aren't super gimmicky and use fresh ingredients.
