A few things the market does have a full kitchen and fryer in the back. The front is done for final prep and serving. The vendors do sometimes cook in the stall. But I can assure you the chicken, the wings from koreole are all fried in the back. The brisket is cooked on site as well. It is a small kitchen but the vendors have the system worked out.

If anyone is up for a tour let me know

I will be very interested in a tour in a couple weeks after Mardi Gras. I plan to come down one early morning to do some photography.

Our average ticket is around $10. Not fast food pricing but we feel it is fair for what you get

That's why I mentioned "fast food food court" prices. The food court at the mall is expensive (due to high rent), but it's still fast food.

It's cool y'all don't charge rent and supply all materials.

I wish BR would get something like this.

The "gentrified" thing is not only overstated, it's silly.

The prices are very fair.

It is safe to go there (fricking chickenshit white pussies, for frick's sake).

The food truck image never has crossed my mind, but I guess I can see (sort of) how that could happen.

My only real criticism is that I was hoping they would have a larger selection of produce in the market area.

It has been about what we expected. Our model was that we pay for all the equipment, build out, bus, dish, management and security labor. All overhead.

The vendors are just responsible for their food and labor costs behind the counter. The vendors can move in and test their concepts with no personal guarantees etc and try their concept.

Ideally the vendors can test their concept in the market,
with minimal capital investment, and see if they can open their own space.

VOR,

Produce is an issue we continually are working on. Any feedback is appreciated. NOFOX is correct space is a premium at the market.

Cold storage is tough for bulk purchasing and the amount of product we can sell in a timely manner.

We are working on new approach this spring so we provide more product at lower prices.

the old st roch market was very New Orleans and very cool but also pretty gross inside. this is something that neighborhood may not be able to support now but hopefully it helps spur some additional development

Look at Freret street, before the storm it was a septic shithole, now it's a boomtown

I happen to know, asked some question when I saw the wide variety and ability to provide fresh food. Just enjoyed watching someone (not you) give me their knowledge about how nothing was cooked there.
