Always liked the Jacques guy. Not so much Martha Stewart. I want to grab her and shake her from slow motion into regular speed.

Julia Child always called him Jack. He was the development chef for Howard Johnson's.

He has a great book LaTechnique which has tons of good fundamentals including great knife handling section.

But his book The Apprentice is his autobiography and it is a really good read. If you see his show now he has his buddy Jean Claude on it and they have been cooking together for 50 years. He also had a stroke recently but I think it wasn't that bad. Great chef and my all time favorite.

I always laugh when Julia calls him "Jack". "Jack's" hands have always looked very arthritic to me.

I follow him in Facebook. He posts a good bit and includes pics with his family and of family events. He's still getting the most out of life.

It's not any more work than homemade fries, especially the double fry method which I use. You can do everything ahead of time and fry them later on, so you don't need the two pots going at once.

I don't fry too much Gris due to the mess but you do have a point. I was thinking I would need 2 fry pots going but it wouldn't be necessary.

Definitely not. They're fun to make for people who haven't had them, in particular for kids who get a kick out of them. They're sort of magical to non cooks and kids.
