Solid French Onion Soup Recipe?

Anyone got a good one? My wife loves it and I haven't found a recipe that I like.

Google the Cook's Illustrated recipe. Also America's Test Kitchen.

The key is making a great stock. Make your stock with oxtails. All that cartilage creates a stock with incredible body.

If you get this right, any recipe will do.

I like my #2 onion soup recipe best.

Ruzil is right about having good stock.

However, I never started a French Onion Soup with Ox Tail Broth. IF I cook Ox Tails, I'm doing something else with them.

For me, the key is the slow roasted caramelized onions. The darker the better.

I use pioneer woman's recipe, she browns the onions in the oven, takes a while but is very easy

This takes a long time, especially if you make your own stock, but it is great.

Important as well, but if you haven't had a well made French Onion Soup made with an oxtail stock you haven't lived.

I get soup bones from the local butcher. Most are either short rib or Ox tail discards. Roast off then make a potent stock. Deep caramization of the onions and the rich stick and yiu are in business.

If you use ox tails for the stock, do you shred the meat and use that in the soup?

No meat in French onion soup. Strain the stock.

No meat. That's why I suggest getting soup bones for the stock. Ox tail these days can be pricey.
