So what dish could a coonass invent to cook on this device?

Looks like the intended purpose is an oyster roaster, what else could it be used to cook?

I could see it being used to cook whole fish (Redfish).

Maybe shell on shrimp (cross between steaming and grilling?

I'm sort of curious what makes it any different than another grill or roaster that makes it better for oysters

I'd have to think you could roast poultry or some pork or beef roasts on it without much of a problem. Just keep an eye on the temperature

Flat top separates the fire from the burlap

Can't use burlap on a grill

I don't know the answer to that either. I'm to understand why wood is used, and if it adds anything besides heat

It's built for roasting oysters. I've been to a low country oyster roast and the cooking apparatus is flat sheet of metal or grate over a 3 sided brick pit with wood fire in the middle and the wet burlap sack over the oysters for steam. The wood fire is essential and it puts a nice smoky roasted flavor on the oysters.

It looks like a cooking surface and a heat source, so I could probably cook literally anything on it.

...I use something similar to do a paella when camping.

That's basically an unlisted jambalaya in my book.

With a fire that size, anything you wanted to sear/char/grill quick.

While a coonass didn't invent a hibachi, Id imagine you could do a hellified one on there.

Anything on the Waffle House menu. :) In all seriousness, I was going to say steamed mussels but the broth is such an important part of that dish that I retract my suggestion.

thats how a lot of east coast folks cook clams and oysters and even lobsters. The lobsters come out good but I don't care for the oysters and clams.
