What's your initial plan?

Usually brown on stovetop in Dutch oven with onions and bell peppers. Add a little beef broth and cover. Put in oven on 300 for an hour or so. It's good just looking for other suggestions.

Heat 2 inches of oil to 350. Dredge the chops in seasoned flour and fry until golden, turning them a time or two.
Pour of all but 4 or 5 T of the oil and add back 4 or 5 T of the seasoned flour. Whisk until bleneded and brown. Add several cups of water or stock to make a thin gravy. Add the chops and simmer on a low heat, covered for 30 minutes, stirring occasionally. Reseason as needed.
You can add thin sliced onions when making the gravy if you wish.

Throw some smoked sausage and cubed potatoes in with your floured and browned chops. let that cook down with your gravy.
