Smoking some Beef Ribs

Got the Egg fired up about 8 this morning, ribs went on at 930 cooking at 280f with some Pecan wood chunks. Seasoned with Kosher salt and Cracked Black Pepper. Probably going to take 6-8hrs.

Fired up the primo at around 430. Butts on promptly at 5.

5am



8am. Had to release some heat



Cruising at 225. Rubbed with honey and a homemade blend. Hickory and apple wood.

The looflighter is a time saver for sure. I was worried about some of the reviews saying they were cheap and easily broken, but I have had no problem with mine.

It seems pretty well made to me. I've only been using mine for about 5 months, but so far so good. Burning coals in under a minute is legit.

It may take a little longer but I use the Weber wax cube and once lit move the hardwood over it and up and running in about 30 minutes.

All those electrical cords just to smoke some ribs seems like overkill. Makes me feel inadequate since I do all my outdoor cooking on a Webber Kettle with a simple probe thermometer.

ETA: I' cooking spare ribs today using this recipe. Red Wine Braised Short Ribs Got the ribs at WalMart for $2.94 per pound.

I use something similar to this. It's awesome. I had an electric one but hated the cord. It's a weed burner.

Wow, I bought some of those Beeve ribs my self yesterday for my BGE.

I watched a Franklin show about a BBQ joint that specializes in them. Tons of black pepper , I mean black.

250 is what I was planning on but don't know how long they will take, never did them.

Been steady at 178 for the last 2 hours. The stall is real. Time for the primo to earn its keep.

What ya got as far as sides go?

I smoked one a couple of weeks ago from 5 PM until 5 AM the next day.

Had it with slaw and Hawaiian rolls. I forgot how good those little rolls are.

Making tacos with slaw with the pork. We really aren't doing sides since they usually get overlooked, but we made some bean dip. We'll have guacamole and other snack type foods.

Gotta limit the carbs for the keto krewe coming over.

Ribs are done, went for about 7hrs now to let them rest for about an hour before slicing.
