Smoked Ponce', GOG with recipe.....

Depends on where your from as to what you call it. How good does this look? I can't wait to cook this. Anybody ever build their own rather than buying it?

Looks awesome but serious question as I've never had it: What makes it different than sausage? Other than the casing?

That's pretty much it.. A sausage meatloaf, except the casing is thicker. When you brown it, you can make the casing crisp or tender depending on temp, water in the bottom of the pot and browning time. I like the outside skin a little crisp because I eat the casing.. Don't freak out. It's good.

But just like other sausages, different smoking techniques, quality of pork used, etc. affect the quality, texture and taste.

This ponce looks ok, but if you try Lejeune's in Eunice, you won't be satisfied with anything else.

I usually buy mine from LeJuene's when driving through Eunice ..... for $10, you can't beat it

my favorite. I usually prefer green ponce. however, when cooking two at a time, i'll do one smoked and one green

Mama used to stuff hers with her rice dressing. She stopped because it became hard to get the ponce. Every store was stuffing them and selling them so they didn't have the ponce left over anymore. BTW bdevil is leading you in the right direction with his Lejeune's recommendation. I'll add get his tasso as well. Always stop there and at T'Boy's in Mamou and stuff my ice chests when I'm heading home.

Ponce is great. Probably my favorite Cajun delicacy. This was one that I cooked last night from Teet's. It came out great but I prefer T-boys I believe.

Teet's and T-Boy's are both great, but Lejeune's is still better. Lejeune's grind on the meat is superb.

Lejeune's has a facebook page, btw.

I've done a couple I got from Teets and I have one in the freezer now. Someone on here told me to smoke it and then build a gravy around it which is how I've done them and I like it that way with rice.

In Virginia and North Carolina they are called Tom Thumb's and Dan Doodle's. Apparently they use the appendix.

I've heard them called a Chaudin around here too and for most people they are a hard sell. You have to either not tell them what it is or know they are enthusiasts to get them to eat it.

I agree on the "hard sell"

people have no problem eating sausage stuffed in intestine casing, but freak out when you tell them it's sausage stuffed in the stomach and smoked

my kids said "I'm not eating that, eeewww "

I told them it's either ponce or ham sammiches

after each took a baby bite taste, my kids had a serious change of mind

Lejeune's is the shite, my grandparents live directly across the street and anytime i go i get enough to last until my next trip out there
