Reverse Seared a Couple Prime Strips Tonight

Broke out the propane burner and got my cast iron skillet to about 750. Came out perfect and tasted delicious. For your viewing pleasure:

I mean..not well done, but you did a good job.
After eating a reverse seared ribeye last night, I think I'm going strip for the long term now. Was hooked on rib eyes for the longest, and only recently started doing some strips. I'm liking strips more and more now.

Question, you left out the first part of the reverse sear. Where do you do the first part and what temp did you go to?

Photography pro-tip: butter those steaks after they're cooked and before taking the picture.

Got a sous vide recently. I gotta do the outside burner thing soon!

You hit the sweet spot there.

I did them in the oven at 275 until they hit 125. I pulled em out and let em rest for 15 minutes and then did the searing outside on that cast iron.

I also threw a tablespoon of butter in the cast iron and let that melt.

I still do both ribeyes and strips just depends on what I'm in the mood for. Also depends on what HEB puts on sale

Those look great! I am on team strip for myself but I prefer the big ribeye roasts for when we have company.

Gotcha. Nice job.

I have a similar back patio BTW. Belgium slate reclaimed from a New Orleans location but it's all irregular so when they installed it, took a bit to get all the pieces to fit.

In the strip vs. ribeye conversation, I tend to enjoy the flavor of a ribeye more, but I seem to be cooking more strips as of late. They slice a lot more evenly and plate up nicely.

It's a toss up. If my life depended on it I would take a prime N.Y. strip.

Eta I achieved the perfect steak a few years ago. It was a prime strip. All I did was get my gas grill to 700 and blasted each side about 4 minutes. It was due to the cut and quality not the method.

I prefer a strip over ribeye if prime, and a ribeye over a strip if choice.

Pavillions in Seal Beach an upscale store owned by Safeway. I still shop there regularly. Those are the best I've ever seen for sale there though. I couldn't believe it. They were the best steaks I've ever had.

125 is too high try 110 next time for more rare
