When the cast iron is that hot and you throw butter in with the steak hiw are you not burning the butter?
Seems like as soon as the butter hits the pan it's gunna burn

I've been wanting to ask for awhile. I see alot of pictures of reverse sear on here with butter in the pan. I sear it without butter

I'm a reverse sear guy. I have used butter. The only way to do it in an extremely hot cast iron is at the very end. No more than 1 minute. Burnt butter does not taste good. Been searing without butter too fwiw.

Add it at the very last second and dollop it on the steaks as needed. Otherwise I just use grapeseed oil.

it didn't burn though. I threw a very small amount in the pan at the last second.

question... could i put my cast iron on my double jet burner? or will that burn a hole in the skillet? or would the pan be way to hot to cook a steak in?

My guess is that you just don't really have any idea what you're talking about. That is the internal temp for medium rare.

I think some people are overestimating what "hot skillet" means. Yes you want it very hot but you don't want to melt the damn pot.

Yeah I don't think I want to go much hotter than 750 that I did last night. Normally I have done it on my grill at about 600.
