I was over in Destin 3 weeks ago and it was open and very good.

Is Chops still open? Drove by it yesterday and it looked closed.
I don't get what all the fuss is about Ocean Club. I've eaten there twice, the second time last week, and I think the food is average at best, and their wine list is a joke.

I know the guy that owns it, he's from NOLA. Personally, I love it. He also owns a restaurant in Santa Rosa Beach (in between Panama and Destin) called Old Florida Fish House. If you feel like making the drive it is well worth it. Great fish, lobster, etc. They even have sushi.

Cook your own food is my vote. I have been to many of resturants in Destin and I haven't found 1 worth the money. Most of them or OK but none real good.

Also - many restaurants in Destin and FWB will cook fish for you and only charge for side items. the okaloosa pier was one place that did it, not sure if they still do.
spend a day fishing on a charter boat, catch some snapper, have it cleaned at the docks, then take it to someone else to cook it for you while you sip a brew. doesn't get much better than that
