Question about large jambalaya cooks

If you are doing chicken/sausage, do you have to debone the thighs before you cook or can you just toss them in the pot and let people deal with the bones.

Either buy boneless thighs or debone the thighs. This is a no brainer and making people pull chicken bones out of a jambalaya because you're too lazy or cheap is bushleague.

Edit: I'm not saying you're lazy or cheap. Unless you blaspheme a jambalaya with chicken bones. Then I am. Good luck on the jambo.

We drop whole ducks in our gumbo. The sound of a bunch of grown men sitting around shouting, "Sumbitch that's hot!" while pulling the meat off the bone is how I know duck season is finally here

I'll deal with bones in the gumbo if it's a good cajun gumbo.

You can but I and 95% of others prefer their meat off the bone. I do have a cousin who makes a mean jmabalaya with chicken wings.

Boil the bones (crack them), do your best to remove them before dropping rice.

Cajun gumbo is ALWAYS chicken and sausage.

Creole gumbo likely has seafood and tomatoes in it.

File' gumbo has seafood, and can be made without a roux.


.0001 ppm of tomato changes a gumbo from cajun to creole.
