I wanted to cook smothered pork steaks last night. My choices of packaged steaks were slim. I saw pork neck bones in the same area and had a thought. Why not cook those in with the pork steaks? Damn those things were good, and maybe it was my imagination, but I think they made the gravy better. Also, I added Pioneer gravy mix in toward the end to thicken the gravy. Best version of this I have ever had.

I've got some pork neck bones in the freezer I was thinking of smothering. Did you have any issues with pieces of bone when eating?

We did not, but this was our first rodeo.

I love to make something similar in turkey neck stew.

I cook the necks down in a rich brown gravy until the meat is almost falling off the bones and remove it to pick the meat off and return it to the pot.

It is a hit with those that eat it and one of my favorite cheap comfort foods to make.

This is my go to with both pork neck bones and turkey necks. If you're going to do a "cheat code gravy," that Pioneer Brown Gravy is the best mix on the market.

... and no, it wasn't your imagination. Pork necks and turkey necks produce the best gravies known to man.

My favorite way to do them is simply put a heap of them in a crock pot on high in some seasoned water, and 6 to 8 hours later that evening I take them out and make a gravy from the stock. I usually add some smothered onions, peppers, and garlic to that gravy as well when I add the necks back in. Undefeated meal.

Back bone is better than neck bone. I usually throw in some neck bones when I do pork backbone stew though.

Pork backbone stew with pigs feet will be the mvp meal when you cook for someone.

I don't think I have ever seen the backbones. I'll look from now on.

I eat smothered neck bones all the time. Soul food, man. Try cooking a pork stew with Boston butt as the meat and neck bones for the flavor.

Wasn't your imagination. Nothing makes a better gravy than neck bones from a pig or turkey.

Try wrapping them in cheese cloth.

Pork neck and turkey neck bones are underrated. They're absolutely delicious and a huge value.

Add some smoked or unsmoked neckbones to your next pot of beans, BEP, or greens...

Use #2 for me last night. Added them to the instant pot with chunks of country style ribs, chopped poblano, bell and onions. Sprinkled with Chile Verde seasoning pack and a little chicken stock. Saved those for my self. Damn they were good.
