while I'm sure that is quite delicious, melting the cheese over the burger is kinda cheating, the melted cheese acts as the binder
if we are talking about the classic pimento cheese sandwich, it needs mayo as a binder, or you just have dry, seasoned cheddar. You need something to make it a "spread"

You do know that a person can grate CHEDDAR cheese in his kitchen for the intended purpose of making a batch of pimento cheese spread.
