never had any fresh-caught, but the mahi I've had at restaurants is usually not very good.

Yeah seafood has to be super fresh and restaurants just usually are not good for that. Thats why I only eat seafood at select places.

ETA You should def try it fresh tho. They sell fresh caught ones at Whole Foods. I threw some on the grill a while back and it was awesome.

Fresh Mahi with some Italian wishbone on the grill is awesome.

The original fish taco in the US was a beer battered fried Alaskan pollock and this is what made fish tacos popular. I like fried fish tacos. I do prefer grilled salmon fish tacos over all others.

Another cool ingredient on a fish taco that not many people think of is shredded hashbrowns. We did some grilled mahi with spicy mayo, hashbrowns, pico, cilantro, avocado, lime juice and zest, tomatillo salsa and shaved parmesan and they were spot on.

I cant speak to the freshness, but the Mahi I had at Bonefish the other night was pretty good.

Grilled or sauteed, not battered and fried. Corn tortilla. No nasty creamy sauces. Mango avocado salsa or a slaw with jalapeño, cilantro, and a honey lime dressing.

My fish tacos consist of fish (usually mahi, halibut, etc) with a simple slaw (slaw, finely sliced red pepper strips, cilantro, lime juice, balsamic/apple cider vinegar, cumin, and a touch of honey), homemade peach salsa, and a lime-chipotle mayo.

Probably going to be on the menu this weekend after i declare jihad on my backyard

Eta: I also prefer flour tortillas but do not discriminate

Grilled all the way. Best fish taco I ever had was at Da Crack in Koloa, Kauai, Hawaii.
