shite, I'm going to get downvoted into oblivion, but JAMBALAYA is never that great. Pastalaya never had a chance.

I think it's that pork, sausage, rice, and onions just scream rice and gravy to me and jambalaya seems like such a waste. Growing up West of the Basin will do that to you.

I love pastalaya but I always use Rotini noodles, never spaghetti

It's called "pastalaya" rather than jambalaya. It already has a distinct name.
