Pastalaya is never that great.

I think the only reason people do this, is because they are afraid they wont get the white rice right.

Naw, it's really good. You must be screwing it up. I do jambalaya too and it is better......but pastalaya has it's place.

I only had it a few times but last time ive eatin it, it was really good. I think the type of pasta is the key. I think it might of been angel hair they used.

I think it's ridiculous to really choose between jambalaya and pastalaya. I love both of them equally.

I cook a vegetable pastalaya that uses rotini and thick cut vegetables with my chicken, sausage, pork. It's one of my favorite meals. It wouldnt be the same if I did that with rice. I also do an old fashioned linguine one.

I'm good with pastalya provided bow tie pasta is used. Any other pasta, and I'm out.

I agree with the OP, in most cases because I'm sure there are some great cooks that also make pastalaya. Ive heard people actually confess to using pasta because it's easier than messing with getting the rice right. To me, pastalaya has always been a wedding reception catered type event dish. It's not a bad dish but I just find traditional jambalaya to be better, the rice is so much better at soaking up the gravy & holds together better. I also love the "gratin" at the bottom of the pot you get with making a traditional jambalaya, can't achieve that with pasta.

It's two different dishes. It's like saying "I cook etouffe because I can't cook gumbo correctly"

Pastalaya is money when done right. That being said, I've had a lot of bad pastalayas.

Pastalaya straddles a fine line of too dry and too oily/slick. I really enjoy it when someone gets the balance right.

I haven't had pastalaya all that much. A couple of times when I'm in the general area, I've gone to Veron's Supermarket in Lutcher on Saturdays when they sell jambalaya and pastalaya.

The jambalaya was some of the best I've ever had, but when I tried the pastalaya, I had to say it was better. And it was made with spaghetti, which I didn't think I'd like.

Guy at our tailgate makes a big cauldron of pastalaya every season that's amazing. 9/10 times I prefer jambalaya, but that guy knows what he's doing.

All things being equal: Would that same guy make a Jambalaya that tastes better than his Pastalaya?

I prefer Jambalaya every time.

It's alright. It's no jambalaya, sure, but I don't think I know anybody that would claim that it is. With that said, when I've been in the beers since 9am on a fall Saturday, I'll eat it.

Negative. I mastered rice in jambs 35 years ago. Sometimes folks just prefer pasta over rice.

Also, if you get a good one, it reheats better than a rice jamb.
