Oven roasting vegetables

I want to oven roast some broccoli, cauliflower, and carrots tonight for dinner. I'm going to put them in olive oiln and red pepper flakes. What's the best way to go about that? What temp and time?

I usually just go with 350 and whenever they get tender

the carrots will take longer than the broccoli and cauliflower I would think

I usually wrap the roasting dish for about 15-20 mins to make sure the veggies are tender. Then I remove the cover and cook for another 10 mins or so until lightly browned.

This. Slice the csrrots down if you can, so it all cooks pretty evenly.

I wouldn't use red pepper flakes-too hot. Roast em at 400 till you get a little brown on the top and bottom of them.

I roast veggies on 425-450 until they get a good caramelization. I put them on a zip bag, add olive oil and shake until just barely coated with the oil. Sprinkle kosher salt and cracked pepper and roast.

Amen to the good caramelization. One time I thought I'd overdone the cauliflower because it got really darker than I'd ever let it go before. It was the best batch!

Yep. The darker the better. Just short of burned. The flavors in roasted vegetables are so different from steamed, raw, baked...

OG you're going to turn into a pumpkin. I'm always up late, but I got up when you do, this morning. Got my supply if shrimp gumbo from Don's in Laffy. They do a good job of packing the gumbo and the raw shrimp separately. I'm a happy girl. Had a decent oyster poboy at Joey's for lunch.
