Other than preparing them as a "steak", do you do anything different with ribeyes or strips?

I will cook ribeyes for sandwiches.

Any other ideas?

My Mawmaw use to make a spaghetti with 7 Steaks, or if the Ribeyes were the same price as sevens she would use that. My favorite thing that she cooked.

If it's USDA select and below....grind it for burgers or chili, chicken fry.

Outside of that, just cook the steak, slice it up and put it on a salad, sandwich, tortilla, lettuce wrap.

Kabobs.

Cube them, marinade, then skewer with some onion and peppers. Grill.

Make some veggie skewers also.

Steak fajitas with NY strips. I was a hardcore ribeye guy, and my wife bought me a couple NY strips because they were on sale. I was like, "WTF am I going to do with this trash meat?" Reverse seared them and started throwing slices in the pan with some onions and bell peppers, but I was starving so I started eating a few pieces. Now I'm a convert, been buying strips and t-bones for steak night (though I still buy ribeyes as well). But I'll use NY strip whenever I do steak fajitas.

Why did you think it was bad?

And to answer the OP, I like to make kabobs as well.

Black eyes?

I cook steak (with some peppers and onions) for fajitas all the time. Need a good one though, something tender. Nothing worse than 'nawing on a tough steak in a tortilla.

I always save a quarter of my steak to have with eggs the next morning.

I'm exagerating a bit. It had more to do with me being a hardcore ribeye guy for the last few years and my wife bringing home the wrong thing. Before that, I really just hadn't given strips a fair chance.
