Not a doc film, but Mind of a Chef is the bomb dot com.

ETA: Just pulled up my watchlist to see what I;ve seen. El Bulli was good too.

If anyone is interested in this and gets to Vegas, check out Kabuto. Some of the best bites of food I've ever eaten.
I actually shouldn't say anything about it here because it's hard enough to get into.

Cooking in Progress

The El Bulli doc, how the top restaurant in the world for nearly a decade operated.

Ferran Adria is the chef and a master of molecular gastronomy.

I'll second both Mind of a Chef and Somm. Both excellent.

I also enjoyed Red Obsession and the series Brewmasters.

Brewmasters

This was cool. Really informative.

Kinda reality show-ish. Every episode has a "crisis" that has to be resolved. But honestly, I feel like that's not unrealistic for brewing.

Spinning Plates is a decent choice. It details 3 restaurants, 2 of which are local mom and pop places that aren't too interesting but the third is Alinea, a 3 star spot in Chicago whose Chef studied at French Laundry. That third of the doc is phenomenal.

There are 1 or 2 sets of food-focused TED talks on there that are pretty interesting
