Need a new stuffing recipe

I am deboning and stuffing a turkey. We have a pretty large crowd this year so someone will have oyster dressing, cornbread dressing and dirty rice.
I'll make oyster pies so since all of those are covered I am looking for something different to stuff my turkey with.
What's new? Spinach and mushrooms?
Surely someone has some ideas.

Im in the camp of never too much oysters. My grandmothers oyster stuffing recipe (obviously making your own garlic butter bread crumbs makes it better....)
Maxine's Oyster Stuffing
1 qt fresh oysters, drained and save juice
1.5 qt bread crumbs
1/2 oleo
1 pint celery finely chopped
1/2 cup onion
1/2 green bell pepper finely chopped
1/c cup parsley finely chopped
2 Tsp Salt
1 Tsp Sage
In large heavy pan, skillet, or dutch oven - heat oleo. Sautee onion, celery and green peppper. Add drained oysters and keep on low fire. When oysters are hot, add salt and bread crumbs. Toss together and turn into non-metallic bowl and mix in parsley and sage. Toss gently.
Stuff Turkey. do not pack.
