Better fish (not sure if that can be used as a factor)
And I think the plating on #2 is way over the top.
I think #2 would have tasted better with #1s fish and a better ratio/consistency of the mixture of the tuna/ceviche.

#2. Not a fan of the seared sesame seeds on the first one (personal taste), but otherwise it was really close.
I chickened out on this one. I didn't get all that excited about the ingredients and wussed out.

I'm going #2 as well. That was my general plan, but altered just a bit. Kudos for pulling it off.
Wanted to participate, but the thought didn't cross my mind when prepping dinner. Having tuna tonight, could have done it I guess.

Sadly, I didn't participate this month due to a couple of rotten events in life. I was thinking of making a julienne of fried pasta strips of the curly shell pasta, topping a ring mold of tuna tartare, and a tangerine gastrique with a balsamic glaze, but no fresh tangerines were to be found this time of year (as R2R noted in a previous thread).
I actually did a test run with some linguine to see how the fried pasta would result. I discovered you can easily lay the pasta down into the oil, forming the initials of guests, something I definitely will be using in the future.
Again, I feel somewhat ashamed for not entering this month. Kudos to the the entrants and funbunch for putting the effort into this. I very much enjoy these competitions.
I'm looking forward to April's challenge.

I didn't take that into consideration. I remember that JasonL97 (or whatever)thread that he went into great detail about fish.

Like I said in the original ingredient thread, the ingredient list was very meh. Can't really cook tuna beyond searing it. Options were limited to untrained cooks.
Those ingredients just screamed out ceviche.

Both dishes look lovely. I don't care for tuna much at all, so I'm not the best to vote or critique these dishes.
