Made red beans for the first time.

Disclaimer: yes I'm from Louisiana, my wife isn't and doesn't like red beans, thankfully my daughter does and the result was great.

I soaked the beans overnight. By the time I started cooking they probably soaked a total of 20 hours.

I did Emerils recipe and doubled everything and did 96 oz of chicken stock. And tried this Creole seasoning I've never tried before.

To be honest man they dont look good. Dont shoot the messenger!

Maybe the better statement is they dont look right. Ive never seen a pot of beans that color. Looks more like the color of black eyes instead of red beans.

They look like good creamy red beans, the same color as Popeye's.

I dont know man. looks like something you would get if you ordered red beans at a cajun restaurant in ohio or something haha.

I Mashed some like the recipe suggested, but by soaking them they broke down a lot during the 2 hour simmer.

I like the sauce in red beans, but in hindsight they may have been too saucy.

Yeah, you probably didn't have to mash them at all after that long of a soak.

Either mash OR soak. Not both.

That's just poor lighting of a bad picture. Look how washed out the coloring is in the entire frame. That's not the beans' fault.

Wrong. Mashing is strictly based on if you want to thicken the gravy without further cooking it more. You absolutely can do both. If your beans are fully cooked, you want to eat them now and you want to get the gravy thicker, then you go ahead and mash to your preferred consistency. If or how long they soaked is irrelevant to this.




To the OP, I think those beans look fine. Personally I prefer more whole beans in my batch, so I would not have mashed. It really is all down to what your personal taste is. I'd eat them though.


Did you like them? I don't think I've seen you offer any criticism of them, but maybe I missed it.

Yeah they were great. I really enjoyed it. Sorry about the shitty picture, that was lazy on my part.

The beans look fine... maybe a little light in color..

I cooked red beans a couple of times before I realized the secret was to use bacon grease to cook/sauté the vegetables.. Makes all the difference in the world..

red beans are simple. Ham Hock/salt pork goes a long way to improve it

best red beans i make are with the left over ham bone after thanksgiving or Christmas

Beans look good to me. I think its just a bad picture like others have said.

That seasoning label makes me irrationally angry though
