Louisiana Is Embracing Barbecue Beyond Boudin

While on the road, I also tried a few joints that hewed more closely to Louisiana-style barbecue. Paul’s Rib Shack, in Lake Charles, deserves a return visit for the tender pork steak and the flavorful duo of brisket-flecked dirty rice and creamy corn maque choux. Barbecue-stuffed potatoes aren’t hard to find on either side of the Sabine River, but there’s a great one at Cou-Yon’s, in Baton Rouge, filled to the brim with crawfish étouffée and garnished with eight fried shrimp. After those detours, let’s dig into the beef of the matter.

Not always true

I was at Tejas in Houston a few years ago and spoke w/ the pit master about Gonzo’s beef cheeks and he said not on his menu.

Was back over there the next year and it was on the menu.

Found that interesting.

All bbq restaurants need to look in every direction possible.

It is nearly always MEH.

I've had friends from oklahoma to north carolina all make a better bite of bbq at home compared to any restaurant.

That shouldn't be the case.

1000% the brothers cooking chicken at the corner of louise street and t delpit make better smoked sausage and chicken thighs than any restaurant.

Texax BBQ is over-rated and over priced. Over the last 4 or 5 months, I've had it at well known places in Tyler, Amarillo, and Austin, and was not impressed.

Pound for pound, it just may be the tastiest morsel of bbq.
I took some out of town friends to Gonzos recently. I talked it up a good bit. My friend had one bite of their beef cheek, looked at me and goes “this is the single best bite of bbq I’ve ever had.”

Edit: shite I was thinking of their smoked pork jowls, not beef cheeks. Now THAT is an underutilized cut of meat.

Overrated? Nah. There's nothing overrated about the top places.

Overpriced? Big time. BBQ isnt supposed to be some gourmet meal, yet its priced like one. For that reason, I almost never go.

I am extremely picky about my bbq. Most places are low rent fatty garbage living on the laurels of a trophy someone won in 1987. The Shed, for example. Rather lick the southbound end of a northbound weimeraner than eat at the Shed.

Serious and notable exception: Gonzo's in Luling. Super good food. Super nice people. The owner is an approachable guy and his staff are genuinely happy you came in. I can't say enough good about those folks.

I agree 1000% with this

Texas has incredible bbq.

It’s just way too expensive.

Bbq roots are cheap cuts of meat cooked on inexpensive equipment outside

I had brisket and 2 sides at truth for over $40 !

It was dang good but my god that’s expensive

We call 'em joints. BBQ joints

Your friends should open a BBQ joint in Houston, TX. If they're that good, they would kill it here.

And I doubt your brothers on the street corner make a better smoke sausage than Rabideaux's, Teets, etc.

You throw teets on the bbq pit you'd have been better off just chewing up a used cigarette butt.

How? I have yet to see anyone in Louisiana produce beef BBQ to the level that even a chain TX BBQ place can produce.

Louisiana can't even do pork BBQ correctly.

Overrated? It's the best IMO.

But yes, it is incredibly over-priced. I went to Terry Black's last week and ordered a 1/4 lb of brisket and 2 sides and it was $26!
