Looking for a good chicken salad recipe

Did a bug boil during the weekend, boiled 2 hens afterwards with intentions of making a good salad. Looking for some ideas or some good known recipes.

Will hang up and hope. May just have to wing it.

Mince the chicken, some celery , and a little onion. Add a dab of creole mustard and Cousin's Creole Tomato Dressing, salt, pepper and a tad of garlic powder. Done

I don't follow a recipe. I wing, but usually I use mayo, a little sweet pickle relish (which probably would be good since your hens will be spicy) and sometimes a little dill relish, onion, celery, salt and pepper. I like it pretty simple.

Cream cheese
Squirt of creole mustard
Dill pickle
Celery (optional)
2-3 eggs (also optional)

Not an "after the boil" recipe, but I really like this one. And it's good for gumbo, too.

ETA: Oh sorry. I though you said potato salad recipe.

This is the one I use, no mayo!

No Recipe Paleo Chicken Salad

-Cooked and chopped chicken breast
-Chopped almonds
-Red grapes cut in half
-Mashed avocado
-Lots of salt and pepper
-Bibb lettuce leaves (you could also use romaine)

Mix the first six ingredients together in a bowl, season with salt and pepper, and then spoon onto lettuce leaves. Roll up and enjoy!

How long do you boil the chickens? Never done this before, but I'm intrigued.
