Let's Talk Grilled Vegetables

I can never settle on a single method or preparation. Depending on what they're accompanying, I've done everything from simple salt/pepper/lemon to making a Greek-style dressing/marinade.

Today I decided to brine before and plan on some oil, salt, pepper, chili powder, cumin and paprika to go along with a skirt steak I've been marinating for a couple days.

What do y'all find gives the best results?

I like a 10+ year old balsamic vinegar sprinkled on top.

Toss to coat in a high smoke point oil before, season after.

SImple oil, s&p for me, but I like to make a simple vinaigrette of EVOO, red wine vinegar, fresh oregano, and garlic (puréed in immersion blender) to toss with the veg once they're off the grill.
