What do I know? I have a master's degree in Microbiology and Biochemistry. Among other things, I hold an APHA Certification in Public Health and was a sterilization manager for the World's largest producer of Sterile IV solution. I maintained programs for processing sterile drugs for almost 50 years.

I also know how foolish asking the famous "I left my food out overnight" question is.

Let the guy eat his gumbo since he obviously wants to. Say something that allows him to do that. He either has no bad experience doing that or gets sick, possibly dies.

This is Tigerdroppings. It matters absolutely none at all what any of us say. Folks will wind up doing what they wanted to do when they first asked their question.

Sheesh.

I think it would be prudent to add that,while this would present evidence of spoilage bacteria, it is not an assured method for detecting the presence of many of the pathogens that can cause food-borne illnesses.

Pathogenic microbes do not produce detectable odors and are tasteless when they grow in food. Otherwise, more food-borne illness outbreaks would be prevented by sniffing and taste testing the food.

I don't have a master's degree in Microbiology and Biochemistry...
